Desi Khand
Desi Khand, also known as "khand" or "khandsari sugar," is a type of unrefined sugar commonly used in Indian cuisine. It is made from sugarcane juice that undergoes minimal processing and retains some of the natural molasses and minerals found in sugarcane. Desi Khand has a golden to brown color and a unique flavor profile.Production Desi Khand is produced by boiling sugarcane juice to form a thick syrup. The syrup is then cooled and crystallized to obtain solid sugar. The process of making Desi Khand is similar to that of Shakkar or khandsari sugar.Unrefined Sugar: Desi Khand is considered unrefined as it undergoes less processing compared to white refined sugar. It retains some of the molasses and natural minerals like calcium, iron, and potassium present in sugarcane juice.
