Shakkar
Shakkar, also known as "shakkar" or "khandsari," is a type of unrefined sugar commonly used in South Asian cuisine. It is made from sugarcane juice that is boiled and evaporated to form granules or blocks of solid sugar. Shakkar has a light brown or golden color and retains some of the natural molasses and minerals present in sugarcane, giving it a distinctive flavor.Production Shakkar is produced by heating sugarcane juice in large vessels until the water content evaporates and the sugar crystallizes. The resulting sugar crystals are then dried and broken down into smaller granules or molded into blocks.Unrefined Sugar Shakkar is considered unrefined because it undergoes minimal processing compared to white refined sugar. It retains some of the molasses and natural minerals like calcium, iron, and potassium found in sugarcane juice.
